Here’s a salad to punch up your weekday.
Perfect for drop in soccer fans, hoping they can squeeze in on your couch, this has enough colour and flavour to match anything on the field.
Mango Shrimp Salad
What you need:
1/2 cup Asian sweet chill sauce
2 tablespoons rice vinegar
1 tablespoon minced peeled fresh ginger
12 peeled cooked large shrimp, tails intact
I large head butter lettuce, leaves separated
I large mango, cut into thin slices
2 avocados, pitted and peeled, cut into thin slices
Garnish: Edible flowers, chopped scallions, orange and red cherry tomatoes
What you do:
- Whisk chili sauce, vinegar and ginger in small bowl and season with salt and pepper.
- Place shrimp in medium bowl. Add 3 tablespoons of vinaigrette and toss to coat the shrimp.
- Divide lettuce among plates or assemble on large platter. Arrange mango, avocado and shrimp on top of the lettuce.
- Drizzle remaining vinaigrette over and decorate with edible flowers ( optional)
This salad begs for creative flourishes. Add cucumber or cilantro. Squeeze a lime all over. I love scallions and chopped cherry tomatoes in mine. The sauce lends a kick but if you want to tone down the heat, add more vinegar to the vinaigrette.
